Pulled Chicken BBQ Sandwich

4 boneless, skinless chicken breastsdash of salt and pepper2/3 cup BBQ sauce6 whole wheat hamburger buns
Place chicken breasts, along with salt and pepper to taste, in a large pot of water and boil until fully cooked through. (Time will vary depending on whether you are using fresh or frozen chicken.)
Once the chicken is cooked, use a fork to pull the meat apart so it is thickly shredded. (Shredding too finely will cause the sandwich to become mushy once sauce is added.) Place pulled chicken in a large bowl.
Add a half bottle (approx. 2/3 cup) of BBQ sauce. Toss until chicken is coated.
Distribute chicken evenly onto buns. You may choose to toast the buns first, or add toppings like lettuce or red onion to the mixture, or spread a small amount of the sauce right onto the bun before assembling. This delicious alternative to the classic bbq sandwich will be a hit any way you serve it!

I use a lot less BBQ sauce and no salt since the BBQ sauce has plenty. I put it on Arnolds Wheat Sandwich Thins at 100 calories for a top and bottom bun. (I use the sandwich thins for all my sandwiches now - it's delicious!) This makes a great breakfast sandwich and it's really filling. - 7/29/09

Didn't have low cal bbq sauce but used regular kraft bbq sauce (3 tbsp per 3 oz of shredded chkn) and I really liked it! Husband said 3 tbsp of sauce was too strong and recommends less sauce next time but loves the food! Very easy to prep and make with boiled frozen chicken breasts (10-15 min prep). - 6/2/09

Easy, and tasted great, but when I added up the calories, I got 437 per serving. Ouch! The buns I bought were 200 calories, plus 120 gms of chicken, and about 3.5 tbs sauce (105 calories). With lower-cal buns, I would definately make it again - just be aware of what you are putting in the pot! - 7/30/07

We really loved this! I used Sweet Baby Ray's BBQ sauce; only used 12 TBSP which was fine for us; also found 100 cal whitewheat buns so this came out to be a fairly low calorie meal. It definitely tasted delicious and will be a great weeknight meal if the breasts are boiled the night before. Thanks! - 8/2/09
