Fast & Crunchy Panko Crusted Baked Cod

Ingredients
4 Cod Fillets1 Cup Panko Bread Crumbs2 Tlbs fresh dill or parsley OR 2 tsp dried1/4 cup light mayonnaise1 Tlbs Dijon mustard1 Tlbs fresh lemon juiceSalt & Pepper to tastelemon wedges for serving if desired
Directions
Preheat oven to 450 degrees. Toss the panko crumbs with 1/2 of the dill. In a separate bowl, mix the remaining dill, mayonnaise, mustard and lemon juice together.
Pat the cod dry with paper towels, then season with salt and pepper. Lay the cod in a 9 x 13 baking dish sprayed with cooking spray, space the fish about 1/2 apart.
Brush the tops and sides of the fish with the mayonnaise mixture.
Sprinkle and press the crumbs inot the mayonnaise.
Bake on middle rack until the crumbs are golden brown and the fish flakes apart when gently prodded with a knife, about 15 minutes.
Serve with lemon wedges if desired

    Very tasty! One thing to note is that this is for four fillets. I wondered how much fish that was so I compared the calories in four fillets to ounces. That's about 25 ounces of fish for four servings. I changed it to 5 servings for a calorie savings! - 2/19/13

    I was making only 2 pieces of fish, so I halved the recipe. I also cut down the mayo to less than half (I used 1Tbsp) because it seemed like way too much. Even so, there was enough mayo mixture left over for at least another filet. It was ok, but a bit bland. I'll add more spices next time. - 3/14/14
