Green Fried Tomatoes

2 medium green tomatoes, sliced 1/4" thick2 Tbls extra light virgin olive oilOlive oil spray1/4 cup egg beaters3 Tbls skim milk
1.. Spray large, nonstick skillet with olive oil spray and add olive oil. Heat over medium heat until hot.
2. Mix egg beaters and milk in shallow bowl. Place flour on plate. Dip each slice of tomato in egg/milk mix, then dredge in the flour.
Add tomatoes to skillet without overlapping slices.
3. Cook, turning once, until tomatoes are browned.
4. Remove to plate covered with paper towels to soak up any residual oil.
This recipe makes 4 servings of 2-3 slices each.

You forgot to add the 1/3 cup flour to your ingredient list, but it was included in the nutritional breakdown.
These were great! Light and yummy. I added salt and pepper to the tomato slices before dipping them, and I added just a little garlic powder and cayenne to the flour for flavor. - 6/24/12
