Ingredients
500g fresh spinach250g tub low fat ricotta cheesetwo eggstwo slices bread 1 onion1tsp nutmegsalt and pepper
Directions
serves 4
preheat oven to 180C
wash spinach well, remove stalks, cook, drain well then chop,
whisk eggs, add ricotta, breadcrumbs and seasoning inc nutmeg.
mix ingredients together place in shallow ovenproof dish
sprinkle with parmesan and bake for 20mins
serve with green salad or vegetables
