Ingredients
Oat Bran, 1 cup (remove)Brown Sugar, 6 tsp brownulated (remove)Baking Powder, 1 tsp (remove)Baking Soda, .25 tsp (remove)Vanilla Extract, 1 tsp (remove)Milk, nonfat, .5 cup (remove)Egg, fresh, 1 large (remove)*Walnut Oil, 1 tbsp (remove)Blueberries, frozen (unsweetened), .75 cup, unthawed (remove)
Directions
MIX DRY INGREDIENTS TOGETHER IN BOWL
ADD MILK , EGG, AND OIL AND VANILLA AND LET SET UNTIL THICK. ADD FROZEN BERRIES AND PUT INTO MUFFIN TIN. BAKE AT 375 FOR 15 MINUTES. LET SET 5 MINUTES BEFORE TAKING OUT OF PAN. VERY LOW CALORIE AND CARBS DUE TO USING PURE OAT BRAN.
VERY LIGHT AND TASTY. IF YOU LIKE A SWEETER MUFFIN ADD SOME STEVIA POWDER TO TASTE.

    I can't seem to follow a recipe as written - I exchanged for similar ingredients: soy milk, egg substitute, almond oil, and dried cranberries. I cooked them in the microwave (all 6 at once) for 4 minutes. Next time I will fill 8 muffins since the micro makes them rise more. I will make again! - 3/29/15
