Avgolemono Soup (Egg Lemon Soup)

Ingredients
6 cups chicken broth2 chicken breasts (cooked and chopped)3 eggs2/4 c. arborio rice1 1/2 lemons (juice)1.5 TBS dill weed
Directions
- bring broth, chicken, and rice to boil.
- cook 20 min til rice is done, lower heat to low
- remove 1 c. of broth and allow to cool
- in sm bowl add eggs, beat, and add lemon juice slowly and mix through
- slowly add cup of broth to egg/emon mix while mixing (so that the egg doesn't separate or cook)
- add the cup of broth/egg/lemon to the soup pot
-mix in dill and stir to combine... enjoy!
