* Shrimp, 5 large * White Rice, cooked 1/3 cup * Carrots, raw, 1 small (5-1/2" long) * Celery, raw, 1 stalk, small (5" long) * Summer Squash, 4 slices * Zucchini, 4 slices * Jalapeño Peppers, 1 pepper sliced * Peanuts 1TBSP * Pineapple, canned chunks, 2 TBSP * Water chestnuts, slices 2 TBSP * Soy Sauce, 1 tbsp * Granulated Sugar, 3/4 tsp * Corn Starch, 3/4 tsp * hot sauce, dash * Oil 1 tbsp
Mix the cooking sauce first - cornstarch, sugar, soy sauce, hot pepper sauce. Set aside. Saute the hardest veg in oil first, followed by the soft veg until desired tenderness. Add peanuts then shrimp. Cook until shrimp are pink. Pour in cooking sauce and allow to thicken. Serve over cooked rice.
