Cover beans with water, at least two inches over the top of them in a big pot. Bring to a hard boil and then turn off the heat. Let stand for an hour. Drain water then recover with water and bring to a boil. Turn down heat so beans are simmering and add ham. After cooking for one hour add one cup of finely diced potato. Also add in the seasonings and finely chopped celery. Cook until beans are tender.
