lemon poppysead protein muffins

Ingredients
4 eggs8 oz. liquid egg whites1/4 cup brown sugar1 Tbsp. whey protein powder1/2 cup unsweetened applesauce1/2 cup quick cook quaker oats1 tsp vanilla1 1/2 tsp lemon extract1 cup soy flour 2 tsp almond oil1 Tbsp ground flaxseed1 tsp poppyseeds 1/4 cup sugar1/2 cup nonfat dry milk1/4 cup lemon juice1 tsp baking powder1/2 tsp baking soda2 Tbsp sugar to sprinkle on top
Directions
Beat eggs and mix wet ingredients, add dry (except regular sugar) pour into 24 muffin tins.(about 1/4 cup batter each) sprinkle top with pinch sugar for a little crunch Bake at 350 degrees for 20 min.
