GARIDES ME SALTSA

2 lbs raw shrimp1 Tbsp olive oil2 Tbsp butter1/2 c finely chopped onions2 clove garlic, crushed and finely chopped1 14.5 oz can tomatoes, drained and chopped1/2 c dry white wine2 Tbsp finely chopped parsley1/2 tsp oregano1/2 tsp basil1 tsp saltfreshly ground black pepper4 oz feta cheese cut into 1/4 inch cubes
Serve 4
Shell and devein the shrimp. (You may leave the tail section on if you wish.) Wash under cold running water. Dry.
Heat olive oil and butter over medium heat in a heavy frying pan (preferably one that you can use later as a serving dish). Sauté the onions and garlic until soft and translucent but not brown. Add tomatoes, wine, half the parsley, oregano, basil and seasonings. Boil uncovered until sauce thickens.
Reduce heat, add shrimp and cook five or six minutes. Shrimp should turn firm and pink. Add cheese.
Adjust seasonings. Add remaining parsley as a garnish. Pass hot crusty bread. Serve with a crisp green salad.

this dish was very tasty, and i will be making it again next i am going to leave the wine out and add some feta like you get it in greece - 4/4/10

I have made it without the wine too - and it is GOOD!! I am glad you enjoyed it. I like adding a couple kalamata olives to the plate for a treat.
