# 1/2 Chicken Breast# 1 cup of Green Bell Peppers# 1 cup of Mushrooms# 1 cup of Onions# 2 cloves of Garlic# 1 tbsp of Olive Oil# 1 tbsp of Cilantro# 1 tsp of Black Pepper# 1 tsp of Chili Pepper# Dash of Cumin# Juice of 1 lime
Slice the bell peppers, mushrooms, and onions and set them aside. Put the olive oil in a skillet on the stove at medium high heat and add 2 cloves of chopped garlic. Place the chicken breast in the skillet and season with the pepper (black and chili) and cumin. Wait until the chicken is halfway cooked and add the bell peppers, mushrooms and onions. And the juice of one lime and lower the heat to cook thoroughly. Take off the stove and add 1 tbsp of fresh chopped cilantro so that it doesn't burn. Serve warm in flour or corn tortillas with pico de gallo, lettuce and low-fat cheese. This recipe easily makes 6 servings of 1/2 cup each.
