Melanie's Mac and Cheese with Chicken

Ingredients
Directions
3 small strips of no skin, no fat, chicken breast7 oz of Velveeta Cheese Product2 cups of 1% Milk1/2 cup of unsalted, Butter1 cup of Whole Wheat Rotini Pastadash of salt and pepper (to taste)
- Preheat oven to 350 degrees
***Complete the first four steps at the same time***
- In a medium saucepan boil water for the Rotini, once water in boiling add pasta and cook about 13-15 minutes
- In a small skillet cook the 3 chicken strips on Medium heat for about 10-12 minutes
- In a small saucepan add milk and butter and over low-medium heat, melt the butter
- Cut the Velveeta into small cubes
***Then***
- In small 9 inch clear round glass baking dish (or other small glass baking dish) add the cooked Rotini, then the milk and butter mix, then the Velveeta, stir these all together, then place the chicken strips on top (but have some of the mixture covering the chicken so it's not completely exposed and dries out while baking)
- Cook for about 25-30 minutes (stirring every 10 minutes)
-Enjoy!
***This recipe is very very cheesy, so you may want to cut back on adding this much cheese or use a different type of cheese to suit your taste :)

They do offer low-fat Velveeta in some supermarkets, but not in mine unfortunately...
You could use any of your favorite cheese blends
