Glazed ginger roasted cornish hen

Ingredients
1 Cornish hen2 tbsp Honey1 tbsp Light Soy sauce2 tbsp olive oil1/4 tsp cayenne (red pepper), ground2 tbsp ginger, fresh chopped1 cup chicken broth
Directions
Preheat oven to 375 degrees. Clean and pat dry cornish hen. Fold wings and tuck under cornish hen. Tie legs together. Place cornish hen in a baking dish. Mix together in a bowl honey, soy sauce, olive oil, cayenne pepper, and ginger. Brush glaze over cornish hen. Cook uncovered for 1 hour or until no longer pink inside. If cornish hen browns to quickly, cover with aluminum foil.

    Wish the skin got crispier, but the glaze seemed to prevent that. It did have a really good flavor to it, though. And the pan drippings made the yummiest gravy ever! Next time, though, I'll leave out the oil - the hen seems to have enough fat on it's own. - 11/22/10

    I cooked it at 350 for an hour. I didn't have fresh ginger but substituted ground ginger and I thought still tasted good. I poured some of the glaze on the inside. Unfortunately I think a lot of the glaze gets wasted on the skin. Still was very tender and had a good flavor! - 7/7/09

    The glaze was very tasty indeed. The only thing I'd change would be to remove the skin before applying the glaze, otherwise all the flavor will be lost when the skin is removed after cooking. I can see this being an excellent glaze for grilling chicken breasts. - 6/7/09

    This was really good. The chicken broth is mentioned in the ingredient list, but not in the instructions. They turned out good without it. - 5/30/09
