Stuffed Mushrooms

Ingredients
6 large stuffing mushrooms1 10 oz package frozen chopped spinach1/2 a large onion, diced1 glove garlic, diced2 tsp parmesan cheese1/2 cup cheddar cheese1 tsp olive oil1/4 paprika1/4 corianderdash pepperdash salt
Directions
Preheat oven to 350.
Clean and hollow out six large mushroom caps (average 14 oz package.) Put in 8 x 8 pan

Heat 1 tsp olive oil to large skillet, medium heat
Add onions and garlic, saute until onions are soft
Add spinach. Mix well
Add parmesan cheese. Mix well.
Add cheddar cheese. Reduce to low heat and mix.
Add paprika, coriander, and salt and pepper to taste.
Remove heat, spoon mixture into mushroom caps.
Bake mushroom caps ~20 minutes or until desired mushroom texture.
Makes 6 large mushrooms

    These were great! I made a couple to go with a veggie galette for lunch today. I used fresh spinach and fresh parm and it worked just fine. I'm glad I only had 2 good sized mushrooms - I would have had trouble not eating more than I should. Next time, I'll chop the stems & include them. - 6/28/09

    Against my better judgment I went ahead and made this exactly as the recipe stated. I had a feeling by looking at the ingredients that it was going to be pretty bland but I fell for all the 4 and 5 star ratings. Not a huge mistake, but a mistake. It needs some spice. - 8/7/13
