Chicken Salad with Tofu

One 3.5 - 5 oz. can of Chicken breast (white meat)Tofu (firm) 1" slice cut into small pieces1 Tbsp Hummus (plain or your choice of flavored)1 tsp relish1 tsp yellow mustard0.5 oz. raisins (or nuts of your choice)Optional: can add 1 Tbsp of fat-free mayo for creamier texture
Drain canned chicken breast and place in a bowl. Seperate chunks with fork until finer texture. Add tofu slices, hummus, relish and mustard and mix until smooth consistency. If you prefer a more moist texture, adding one Tbsp of fat-free mayo will provide this. Add the chicken tofu dish on top of salad greens and toss with raisins or nuts of your choice for a satisfying protein-packed meal.
