Banana Oatmeal Breakfast Pancake

1/2 cup uncooked oatmeal (quick or regular)3 egg whites1 Tbsp flaxseed meal1/2 banana, slicedVariation: Substitute banana with: 1/2 cup of your favorite fruit OR1/2 apple and add a pinch of cinnamon for an "apple pie" pancake.
Makes 1 pancake.
On medium heat, preheat frying pan and spray with cooking spray.
Combine all ingredients in bowl and mix with a fork.
Pour batter into frying pan and cook until pancake can be easily flipped. (I usually wait until the "snap, crackle, pop" sound stops)
Flip pancake. When cooked, transfer to plate and enjoy!
Note: I usually top this with a tablespoon of natural peanut butter or 1/4 cup of nonfat yogurt but it's delicious by itself as well!
