Herbed Tomatoes, Chicken and Rice

Ingredients
1/4 cup Kraft Calorie Wise Italian Dressing4 small boneless, skinless chicken breasts (1 lb./500g)2 cloves garlic1 can (28 fl oz/796 ml) diced tomatoes, undrained1 cup water1 1/2 cups instant white rice, uncooked1 cup Kraft Part-Skim Mozzarella Shredded Cheese1 fresh tomato, chopped2 tbsp. chopped cilantro
Directions
1. Heat dressing in large skillet on med. heat. Add chicken and garlic; cover. Cook chicken 5 min. on each side or until browned on both sides. Remove chicken mixture from skillet; set aside.
2. Add canned tomatoes and water to skillet. Stir in rice; bring to boil. Reduce heat to low; simmer, uncovered, 10 min. Return chicken mixture to skillet. Sprinkle with cheese; cover. Cook 5 min.
3. Top with fresh tomatoes and cilantro.

Jazz it up by adding 2 tsp. crushed dried rosemary or thyme along with the canned tomatoes. Or use canned stewed tomatoes with chili added.
