Shrimp with Feta Cheese

1/4 c loosely packed fresh parsely3 Large garlic cloves3T unsalted butter36 uncooked, cleaned and peeled shrimp3/4 t oregano1/4 t red pepper flakespinch of salt3/4 c dry vermouth12 oz fresh plus tomaotes, cut in 1/2 inch dice3 oz crumbled feta
Preheat oven to 350 degrees.
Melt butter in saucepan, add garlic, shrimp, oregano, red pepper flakes and salt. Cook shrimp until almost pink, turning once (@2.5 minutes).
Transfer shrimp to casserole dish. Add vermouth to skillet and reduce by 1/2. Add juices from shrimp plate. Add tomatoes. Sitr 30 seconds. Top over Shrimp. Sprinkle feta
Bake 8-9 minutes. Sprinkle with parsley.
Can be served with pasta, rice or orzo.
