LoFat Cheesy Chicken Spaghetti

8 oz uncooked whole wheat spaghetti3 boneless skinless chicken breast1 cup chopped bell pepper1/2 cup chopped onion16 oz (1/2 of a 2lb pkg ) reduced fat (or light) velveeta cheese- cubed1/2 cup skim milk2 tbsp minced garlic1 tsp butter
Put chicken in a crockpot and cook on high for 3-4 hours. (put it on while you are at work, and its done when you get home) In a seperate pan, boil pasta until done.In a skillet, sautee onion, garlic and bell pepper with 1 tsp butter. In a large bowl, place chicken and shred with a fork. Add 1/2 cup of the broth from the crockpot. Add sauteed veggies, cheese, drained pasta, and milk to chicken. Pour mixture into a 8.5x11 casserole dish. Bake in the oven for 20-30 min, or until cheese is bubbly. Remove from oven and give it a quick stir. Makes 6 one cup servings.
