Baked Haddock with Seafood stuffing

Ingredients
8 oz haddock1 cup imitation crab or lobster15 reduced fat ritz crackers1 cup sliced onions1 cup chopped mushrooms2 tbsp garlic2 tbsp lemon juice
Directions
Preheat oven to 375 (or 350 convection)

In a saute pan, saute onions, mushroom, garlic and imitation crabmeat. Once onions start to get a light golden color, crumble ritz crackers into the pan and add a half cup zero calorie margarine spray until texture resembles stuffing.

In a shallow baking dish, add some of the stuffing to the bottom. Lay the fish on top and cover with the rest of the stuffing. Drizzle the lemon juice over the top and cook for about 20 minutes or until fish is white and flakey.
