1 can back eyed peas, drained and rinsed1 can black beans, drained and rinsed1 can shoe peg corn, drained1 can RoTel diced original tomatoes1/4 C chopped cilantro4-5 green onions, chopped1 fresh tomato, chopped1 green pepper, chopped1/2 C low fat Robusto or Zesty Italian dressingGarlic powder to taste

Mix all ingredients and chill.

    I haven't made this exact recipe, but my mom made/makes something similar in the summer as a dip for toritlla chips! It is a lot simpler (just black eyed peas, onion, bell pepper, pimento, and dressing) and we call it mississippi caviar. I LOVE it! - 7/6/10
