Greek Grilled Chicken

2 tablespoons lemon juice 2 tablespoons olive oil 3 tablespoons chopped fresh parsley 1 garlic clove, crushed in garlic press 1/2 teaspoon dried oregano 1 1/2 lb boneless skinless chicken breast
1. Combine lemon juice, olive oil, parsley, garlic, and oregano in large plastic food storage bag.
2. Pierce chicken with fork several times and sprinkle with salt and pepper.
3. Add to bag and coat with dressing, marinate 20 minutes.
4. Remove chicken from bag.
5. Grill or broil 6 minutes per side.
6. Or, cook in a grill pan over medium-high heat, 5 to 6 minutes per side, or until cooked through.

I love making this chicken and then putting it on a Caesar salad. The lemon & garlic is a perfect flavor match to the Caesar dressing & parmesan cheese. The bottled Greek dressing also works as well. I make this at least 2X a month. I always grill an extra piece of chicken to chop up for later. - 1/19/15
