Quick Potato Soup

Ingredients
4 large potatoes, peeled and cubed2 carrots, peeled and sliced1 cup chopped onion3 cups water1 cup milk1 can cream of mushroom soupsalt & pepper to taste
Directions
1. Combine potatoes, carrots, onions, and water in a large pot and bring to boil.
2. Reduce heat and simmer, covered for 15 minutes.
3. Mash the vegetables with a fork or masher. Do not drain the water.
4. Add milk, cream of mushroom soup, salt, and pepper.
5. Cook until heated through.

    I also use canned skim milk, but I omit the canned soup and use instant potato flakes as a thickener. - 5/6/09

    Recipe is similar to mine but I like lots of celery and use canned skim milk in place of mushroom soup to cut down on sodium. Thanks for sharing. - 5/6/09
