Lentil Salad

Ingredients
2 cups lentils cooked water with a bay leaf1/4 cup chopped onion3 medium carrots, chopped1 red bell pepper, seeded and chopped2 Tbsp. extra virgin olive oilJuice of one limeSalt and pepper to taste1/2 tsp. garlic powderCayanne pepper to taste
Directions
Cook the lentils in water with one bay leaf until soft. Drain and set in a large bowl.

Add in the remaining ingredients and toss to coat. Serve immediately or refridgerate for a few hours.

This is great in lettuce cups or in a wrap.
