Ingredients
2 baby zucchini, liquid egg white equivalent to one egg, two to three tablesons seasoned breadcrumbs
Directions
peel and grate zucchini, mix with egg white, parmesan cheese anf breadcrumbs until liquid absorbed. Spray foreman grill with buttery spray. When grill is hot, spoon mixture on grill, close cover and grill until set and nicely browned

    Wonderful and fast, This recipe can easily be changed for variety. I am going to try using yellow zucchini with a little corn and some hot peppers for a low cal. mexican flare to accompany some spicy chilli. - 7/9/07
