# Ground beef, lean, 24 oz# White Rice, long grain, 3 cup (COOKED ABOUT 6 CUPS) STEAMED NOT MUSHY# Cabbage, fresh, 2 head, large (about 7" dia)# Tomato Sauce, 3 cup# Canned Tomatoes, 1 can# Onions, raw, 1 large CHOPPED# Green Peppers (bell peppers), 0.75 cup, chopped# Basil, 2 tbsp CHOPPED FINE TO MAKE 2 TBSP# *Onion powder, 1 tbsp# *Onions, dehydrated flakes, 3 tbsp# Garlic powder, 1 tbsp# Parsley, dried, 2 tbsp# *Cheese, Kraft Mexican Style Taco Cheese, 0.25 cup# Salt, 3 tsp TO TASTE# 2 PACKS OF YOUR FAVORITE SUGAR SUBSTITUTE

COOK THE 3 CUPS OF RICE. TAKE THE OUTER LEAVES OFF THE HEADS OF CABBAGE YOU NEED ABOUT 10 TO 14 OF THEM LARGE ONES CAN BE CUT IN TWO WHEN YOU SERVE THEM,TRY NOT TO BREAK THEM. PUT THEM (STEM SIDE DOWN) INTO A POT OF SALTED WATER. THEY DON'T HAVE TO BE ALL THE WAY IN. BOIL THEM FOR 5 MINS AND TURN OFF WATER AND LET SET. NOW THE PARTS OF THE 2 HEADS LEFT SHRED IT UNTIL YOU HAVE ABOUT5 CUPS. BROWN THE GROUND BEEF OR WHICH EVER MEAT YOU USE. AFTER MEAT IS BROWN SET IN A STRAINER TO LET THE OILS RUN OUT. BROWN THE ONIONS AND BELL PEPPERS. POUR THEM INTO THE MEAT AND LET DRAIN. NOW TAKE THE 5 COOKS OF SHREDDED CABBAGE AND PUT IN THE POT AND BROWN IT USE OIL AS YOU NEED TO. WHEN IT IS COOKED DOWN AND BROWN POUR IN CANNED DICED TOMATOES AND THE CHOPPED FINE BASIL. STIR AND KEEP COOKING FOR ABOUT 5 MINS. NOW POUR IN ABOUT 1 CUP OF TOMATO SAUCE (ABOUT3/4 CUP) WITH A LITTLE WATER. STIR.NOW POUR IN THE MEAT MIXTURE AND STIR. PUT IN SALT TO TASTE, AND 1/2 THE GARLIC POWDER, ONION POWDER .LET BOIL FOR ABOUT 10 MINS. STIR OFTEN. YOU WANT THIS MIXTURE A LITTLE WET STILL WHEN YOU POUR IN YOUR RICE. AFTER IT BOILS THE 10 MINS. TURN OFF HEAT. STIR IN 2 PACKS OF SUGAR MIX WELL. NOW MIX IN THE COOKED RICE. STIR AND BE SURE ALL LUMPS OF RICE IS STIRRED OUT.
IN A LONG BAKING PAN POUR IN THE REST OF THE TOMATO SAUCE MIX IN THE REST OF THE GARLIC POWDER, ONION POWDER AND MIX IN ALL OF THE ONION FLAKES. SET ASIDE.
NOW TAKE THE POT WITH THE LEAVES IN IT TO THE SINK AND POUR OUT THE HOT WATER, RUN COLD WATER IN AND DON'T PULL OR TUG ON THE LEAVES. ONCE THEY ARE COOLED PICK THEM UP CAREFULLY NOT TO TEAR THEM. SET ONE LEAF IN A BOWL AND SPOON IN ENOUGH MEAT MIXTURE TO FULL THE LEAF, LEAVING ENOUGH ROOM TO ROLL THE LEAF AROUND THE MIXTURE. ROLL BY PUTTING THE STEM SIDE OF THE LEAF INWARD THEN PULL IN THE SIDES THEN ROLL TO THE TOP OF THE LEAF. PICK UP THE CABBAGE ROLL (CAREFULLY) AND PLACE IT IN THE PAN WITH THE TOMATOE SAUCE. SPOON SOME OF THE SAUCE OVER THE ROLL. MAKE NEXT ROLL THE SAME WAY CONTINUE UNTIL ALL LEAVES ARE FULLED, ROLLED, PUT IN PAN, AND SPOONED WITH SAUCE.
ONCE ALL ROLLS ARE READY IN THE PAN, SPOON SAUCE ON ONE MORE TIME,THEN SPRINKLE THE PARSLEY FLAKES AND TOP WITH A PINCH OF CHEESE. BACK AT 350* FOR ABOUT 30 MINS. DON'T COOK ALL THE SAUCE OUT. STOP MIDWAY THOUGH COOKING AND BASE AGAIN WITH THE SAUCE. WHEN DONE SAUCE WILL REDUCE DOWN AND THICKEN HAVE SAUCE LEFT TO SERVE WITH THE ROLL. PUT ROLL ON PLATE AND SPOON AND COUPLE OF SPOONFULS OF SAUCE OVER IT.
THESE FREEZE WELL. YOU CAN MAKE THEM UP AND TAKE TO WORK FOR LUNCH HEAT IN THE MIC. THIS WITH MY SALAD WITH CAESAR LITE DRESSING AND SWEET TEA IS ONLY 638 CALORIES.

    Made these Oct 15th and froze about a pound of the stuffing. Jan 5 thawed, heated and added 2/3 of a can of enchilada sauce and rolled in whole wheat tortillas. Rest of can of sauce and another some shredded cheese. Bake at 350 for 25 minutes. Husband loved these too!! - 1/7/10
