Ingredients
2 skinless, boneless chicken breast halves 4 stalks celery, chopped 1 large red bell pepper, diced 1/2 red onion, diced 1 (8.75 ounce) can sweet corn, drained 1/4 cup barbeque sauce 2 tablespoons fat-free mayonnaise
Directions
Cook chicken however you prefer. I usually chop up the chicken, then cook it in a skillet with salt, pepper, and whatever seasoning is laying around. However, grilling, baking, or boiling works too.

In a large bowl, toss together the chicken, celery, red bell pepper, onion, and corn.

In a small bowl, mix together the barbeque sauce and mayonnaise. Pour over the chicken and veggies. Stir, and chill until ready to serve.

this was great salad for us to take to a summer concert. I braised cubed chicken with a little water and about a tablespoon of BBQ - really pumps up the flavor! - 6/18/12

I love chicken salad, but always feel guilty eating becasue it's normally wicked mayonaise-ey. This recipe lets me eat chicken salad, but not feel bad about eating it. - 7/22/08
