* Ground beef, 500 grams * Carrots, raw, 3 medium * Carrots, raw, 200 grams * Onions, raw, 200 grams * Celery, raw, 140 grams * Eggplant, 300 grams * Tomato Paste, 100 grams * Crushed Tomatoes, 500 grams * Garlic, 3 cloves * Soy Milk, 1 cup * Red Wine, 350 grams * 1 bay leaf * Nutmeg, ground, 1 tsp
In a large pot, cook onions, carrots, celery and aubergine until soft, about 5 minutes. Add tomato purée and cook for another minute, add minced garlic. Add tinned tomatoes and simmer for five minutes whilst browning minced meat in a skillet. Add the meat to the pot and pour over soy milk and red wine. Add bay leaf and nutmeg, and simmer for three hours or until sauce has thickened.
