Strawberry Snack Cake

Ingredients
1 3/4 cups cake flour3/4 cups sugar1 tsp baking soda1/4 tsp baking powder1/4 tsp salt1/4 cup soy yogurt1 1/2 tbsp canola oil1/2 tsp vanilla extract1/2 cup water1/2 cup vanilla soy milk (hemp or almond will work well too)2 tbsp lemon juice1 pound strawberries2 tbsp corn starch1/2 cup sugar1/4 cup water
Directions
---Mix together flour, sugar, baking soda, baking powder and salt. Add soy yogurt, oil, vanilla, water, soy milk, and lemon juice. Mix until just blended - do NOT over mix. Pour into an oiled 8x8' pan and bake at 350 degrees F for about 30 minutes or until a toothpick comes out clean. Remove and allow to cool completely.

---Combine the strawberries, corn starch, sugar and water in a saucepan. Cook over medium-high heat until sauce boils and thickens. Spread over top of cake. May be served warm or chilled.

    I made this recipe last night for dinner for my non-vegan parents, and they absolutely loved it, as did i! I love the recipes from fatfreevegan.com I didnt have enough strawberries for this recipe though, so I did half strawberries and half blueberries, both of which I got from the farmers market. - 8/8/10
