Ingredients
1 lb lean ground beef or ground turkey1 med onion 1 lg eggplant 8 oz tomatoes, cut up1 lb mushrooms fresh or can1/4 cup fresh parsely or 2 tablespoons of dried1 clove minced garlic 1/2 teaspoon oregano1/2 tsp rosemary1/4 teaspoon cinnamonsalt & pepper2 eggs1 cup plain yogurt8 oz of neufchatel cheese cut up or better yet light cream cheese
Directions
In skillet cook beef and onion . drain of fat. stir in vegetables herbs and seasonings cook uncovered for 15 minutes. turn into rectangular dish. beat in blender or use electric mixer to blend eggs cheese yogurt and little salt pour over meat bake at 350 for 20 minutes serves 6-8 so freeze the rest
