Porcupine Meatballs

Ingredients
1 large beaten egg1 10.75 ounce can condensed tomato soup.25 c long grain brown rice.25 t onion powder.25 t black pepper1 lb 93% ground beef1 t Worcestershire sauce.5 t oreganoParmesean cheese (optional
Directions
Combine egg, .25 c of the soup, uncooked rice, onion powder and pepper. Add beef. Mix well. Shape into 20 meatballs. Place in a large skillet. Mix the remaining soup with Worcestershire sauce, oregano and .5 c water; pour over meatballs. Bring to boiling; reduce heat. Cover, simmer, stirring often, about 20 minutes or until no pink remains in meat and rice is tender. Sprinkle with Parmesean cheese if desired.

    Wonderful dish! When plating, I broke each meatball in half, poured the sauce over them and sprinkled them with parmesan cheese. Also added some parmesan to the meat mixture before forming into balls. Outstanding! - 9/2/11

    This was a really tasty recipe! I used ground turkey and did add some Parmesan to hold it together better. I also baked in the oven instead of cooking in a skillet. Definitely a keeper! - 12/15/09
