Summer Squash, Carrot and garlic pasta

Ingredients
Garlic- 4-5 clovesWhole wheat pene pasta, 4 cups dryolive oil, 3 Tbs.summer squash, 3 cups carrots, 1 cupsalt, pepper, fresh lemon zest to taste8 Tbs. Parmesan cheese
Directions
Boil water, add pasta and cook till tender. Drain and set aside
Chop veggies into small pieces about a half inch in diameter.
Chop peeled garlic cloves into smallest chunks but not "garlic pressed" size
Heat large non-stick frying pan to medium heat with 2 Tbs. olive oil
Add veggies and some salt and pepper stirring occasionally until slightly browned and tender, then add some lemon zest and stir, turn off heat.
Add to pasta plus 1 Tbs. olive oil and Parmesan cheese.

    I had this also with out the pasta and I cut down on the oil and near the end. I added a wholewheat slice of bread in the pan. Just to brown it on low. press it down and truned it over. it was so yummy. - 6/30/09

    Thanks for the fresh idea for pasta. I couldn't "afford" that much fat, so wiped the pan with olive oil and then sizzled the vegetables in that. Then when we added the vegetables to the pasta, we added a scant 1 Tbsp of olive oil to set the parmesan. Next time, we'll add more carrot! - 7/30/09
