Ingredients
1/2 of Thomas's Whole Wheat English Muffin1 Slice of (Cooked) Turkey Bacon1 Slice of Tomato5 Spinach Leaves1 Poached Egg
Directions
Begin by heating water to a very low boil. While waiting for the water to boil, lightly toast your english muffin. Carefully poach your egg and start assembly atop your muffin.

Layer a nice thick slice of tomato on your freshly toasted muffin along with a few leaves of fresh spinach (or from frozen). Place cooked turkey bacon as the next layer with the poached egg following it. A dash of pepper over it all and you have a hearty, veggie filled breakfast around 200 calories. Feel free to substitute cheese or other veggies within your calorie range.

    Florentine is always delicious, but can I just make one correction to this. It cant be "benedict florentine" "benedict" is with ham. When you replace the ham with spinach then it's a florentine. - 5/16/16
