Italian Twist Crock Pot Beef Stew

1.25 lbs Beef Stew Meat USDA Choice1 large onion cut in wedges1 large red pepper chopped into larger pieces1 large yellow pepper chopped into larger pieces6 small carrots or 3 large carrots chopped 4 cloves garlic minced2 cups fresh green beans, chopped1 can (15 oz) organic black beans, rinsed and drained2 cups escarole, chopped1 can 28 oz whole, peeled tomatoes Italian or other ethnic seasoning to taste
Place onions, red and yellow peppers, carrots, green beans in bottom of crock pot. Add black beans and top with escarole. Place stew meat on top and sprinkle with seasonings. Pour tomatoes and beef stock over top. Cover and cook on high for about 4 hours or on low for about 8 hours until meat is done.
Serves 5 (4 oz meat)
Variation: For a hearty stew, add potatoes and increase liquid.
Serve over brown rice, quinoa, or noodles or eat as a stew with toasted whole grain garlic bread.
