Easy Oatmeal Banana Bread

DRY INGREDIENTS:1 c oatmeal, dry1 c flour1 T baking powder1/2 tsp baking soda1/2 c brown sugar1 tsp cinnamonWET INGREDIENTS:3 ripe bananas1 egg1 tsp vanillaButter flavored PAM for preparing the pan.
Use food processor or blender to chop oats until they resemble flour. Mix with all the dry ingredients.
Mash bananas and other wet ingredients together. (I use a food processor.) And add to the dry ingredients. Pour into a loaf pan sprayed with PAM.
Bake at 375 for 40 minutes. Turn out and cool before slicing. Don't worry! It is great warm too, if you can't wait that long.
Will make 16 generous slices, as shown in photo.

This recipe is very good. I did not find the bread to be heavy as some others said. However, in the nutrition analysis, it says this has 26 grams of protein in one serving. I reevaluated it using the recipe calculator and only came up with 2 grams of protein. Something must be wrong there. - 5/8/12

I added 1/4 tsp of nutmeg, 2/3 cup of dried cranberries, and 1/2 cup chopped pecans to the recipe and made them into muffins. I baked them at 375 for 15 minutes. They were very good. Thank you. - 6/6/09

I love all the add-in. I wish I could do it, but have a son allergic to nuts and cranberries. But I did think about raisins... And the nutmeg would be a great addition. I have made this recipe with pumpkin substituted for the bananas and pumpkin pie spice. It was GREAT!
