Raspberry Mini-Cobbler

Ingredients
Topping:1 cup raspberries1.5 tsp sugarBase:4 T flour3.5 tsp sugar.5 tsp baking powder4 T Silk Light Plain soy milkNutmeg and Cinnamon to taste1 T butter
Directions
Grease small pan and put butter in. Heat pan in oven until butter is bubbly.

Mix raspberries and sugar in one bowl.

Mix flour, sugar, milk, baking powder, and spices in another.

Put crust until pan once butter is bubbly (helps make it crispy). Spread the raspberries on the center of the crust, leaving an edge. Cook until golden brown and bubbly. Mine took about 15-20 minutes.

Adding a light egg wash would make this look even better!
