Creamy Cajun Shrimp and Pasta

Ingredients
1 cup water14 oz chicken broth, low sodium1 pound shrimp12 oz Healthy Harvest thin spaghetti1 tsp olive oil1 large red bell pepper sliced1 - 8 oz pack sliced mushrooms2 tsp flour1 tsp cajun spice mix, sodium free1 can petite diced tomatoes, low sodium2/3 cup evaporated skim milk (not condensed)1/4 cup fresh chopped parsley
Directions
Put broth and water in large pot and bring to a boil. Add pasta and cook for 8 min. Keep an eye on moisture level. Add a little water if necessary. Add shrimp and simmer for 3 min or until shrimp is cooked. Do not drain.

In skillet, add olive oil. Add peppers and mushrooms, saute for 4 min. Add flour and cajun seasoning. Heat for 30 seconds. Add tomatoes. Stir in milk and heat for 1 min. Add sauce and parsley to pasta.

I like to serve this with broccoli on the side.

    Definitely a family favorite moving forward! I didn't have cajun spice mix, so I made my own with Tony Chachere's Original Creole Seasoning and some ground red pepper. A little too spicy for the kids, but delicious! - 1/6/12

    Add more water and used whole can of evaporated milk and increased flour to 3tbs. Also used fresh tomatoes, green peppers, and onion. Topped with parmesan cheese to serve. very yummy! - 11/13/13

    This was not good at all. No flavor. I was born and raised a coonass so when I see anything saying Cajun I don't expect much. But this looked good from the recipe. Thought I'd try it, now I know to go with my instincts on the things that say Cajun. By the way I do love this website. - 10/17/12

    I really enjoyed this. I added a 1/2 cup more water and that was a good amount. I think next time I will switch out the parsley for cilantro and add some onions. Definitely a great base recipe to modify for everyone's needs! - 3/23/11

    Thought I had everything to make this recipe, but ended up having to substitute Rotel tomatoes (with green chiles) for the diced tomatoes. Thankfully, we did cut the cajun seasoning in half to adjust. It was VERY spicy, but also VERY yummy. We'll definitely make again. Thanks! - 7/9/10

    Very good recipe! Creamy flavor but not heavy. I added a bit of tabasco (we like it spicy!) I couldn't find sodium free cajun seasoning. I added 1/4 cup more water and 1/4 cup more chicken broth and it worked out well.

    Excellent. After reading the reviews, I added 1/2 c. water and 1/2 c. chicken broth extra to the recipe. I would recommend only adding 1/4 c. extra of each. Great flavor, and not too spicy. This will definitely stay on my weekly list. - 10/15/09
