Crock Pot Beans

Ingredients
2c or 1lb dry pinto beans4 boullion cubes (beef or chicken)4 cups water1can diced tomatoesabout 3.5oz diced onionsabout 3.5oz diced bell peppers6tsp minced garlic1lb extra lean ground turkeyseasonings to taste, chili powder, cumin, creole seasoning or seasoned salt, black pepper, oregano (check for calories) this recipe does not calculate them in
Directions
combine clean pinto beans, diced tomatoes, onions, bell peppers, garlic and seasonings.

boil water with bouillon then pour over beans

cook approx 6 hours on low

brown ground turkey and add to crockpot

cook 1-2 more hours depending on your crockpot or until beans are done

***add water while cooking if beans soak it up

***i like to serve mine over rice with sweet cornbread

    So easy to throw together and my whole family loved it! It's called Crock Pot Beans, but it's really another version of chili. I love that it includes dry beans (so economical) and yet there is no need to prep them or soak them separately. Excellent!! - 4/27/10

    let me know how it turns out? what size crockpot do you have? that fills mine up quite a bit and its a 5.5 or 6qt.
