Rhubarb Bread

Ingredients
1 1/2 cups Splenda brown sugar2/3 cups lowfat margarine1 egg1 cup buttermilk or sour milk1 tsp baking soda2 1/2 cups whole wheat flour1/2 tsp salt1 to 1 1/2 cups chopped raw rhubarb, depending on the juiciness of the variety1/2 cups chopped nuts1/2 cup Splenda1 tblsp lowfat margarine1/2 tsp cinnamon1/4 cup chopped walnutsCombine brown sugar, oil, egg, milk and soda. Combine flour and salt and add to liquid mixture, fold in rhubarb and 1/2 cup of nuts. Pour into greased and floured loaf pan. For topping combine Splenda, butter and cinnamon until crumbly. Add 1/4 cup nuts and sprinkle topping over batter in pan. Bake at 350 degree F oven for about 1 hour or until done.Yield 1 loaf.
