NOODLES1 zucchini 1 eggplant1 squash juice from 1 lemon2 red pepper1 yellow pepper1 C corn kernalsWHITE SAUCE1/2 cup pine nuts1 avocadowater to blend6 T Tomatillo SalsaMARINARA SAUCE4 plum tomatoes12 sun dried tomatoes (packed in olive oil or water soaked) 1 C basil, fresh 2 cloves garlicoregano to tastesalt &pepper to tasteagave nectar to taste
Slice the zucchini and the squash lengthwise on a mandolin.
Blend up the ingredients for the white sauce to a creamy or chunky consistency, your preference.
Blend up the marinara sauce to a chunky consistency.
Layer zucchini and squash in a criss cross fashion while adding sauce, peppers, zest, and corn. Top with sauce and garnish with basil and tomato.
Let settle for 30 minutes to 1 hour.
Cut up and ENJOY!
