Sweet Potato Mini-Muffins

1 cup mashed sweet potato1/2 cup butter3/4 cup maple syrup1 large egg1/2 tsp sea salt1/2 tsp cloves 1/2 tsp nutmeg1 tsp cinnamon1 tsp baking soda2 cup organic all-purpose flour1/2 cup chopped pecans1/2 cup raisins
Boil two, 4 - 6 inch sweet potatos until soft. Peel potatos, cube and then mash. Place all ingredients in bowl except raisins and nuts. When ingredients are well blended add raisins and pecans.
Form into walnut-sized balls and place in greased mini-muffin pan. Bake at 325 degrees for about 10 minutes or test with a tooth pick. If you bake too long muffins will be dry.
