Ingredients
1 pound skinless, boneless chicken breast, cubed1 cup onion diced1/2 cup bell pepper chopped1 29 oz. can of white hominy2 tablespoons chipolte peppers in adobo sauce (remove seeds to make less spicy)2 carrots, sliced thin1 box or 2 cans of chicken broth
Directions
Heat a stew or soup pot over medium heat, spray with cooking spray and add chicken. Brown in the soup pot of med-high heat. When done, add all veggies and peppers in sauce. Continue to sautee until slightly softened. Add drained hominy and stir together. COver with chicken broth and let simmer over medium heat for 20 minutes until done through. Salt as desired. Serve with diced avocado, chopped cilantro and lime wedges. Drop cold avocado into the bowl over soup, sprinkle with cilantro and squeeze a lime wedge over the top. Yum!
