Savory Beef-Stuffed Mushrooms

6 large field or white mushrooms1 lb Ground Chuck1 large egg (or 2 egg whites)1/4 - 1/2 medium Bell Pepper (color, your choice), chopped finely1/4 - 1/2 medium Sweet Onion, chopped finely2 tsp Minced Garlic or 2-3 cloves Garlic1/4 tsp Poultry Seasoning or Sage1/4 tsp ground Oregano1/4 tsp crushed Basil Leaves1/2 tsp Garlic SaltWhite pepper, to taste1/4 cup grated Parmesan CheesePAM or other light cooking spray1/4 cup Mozzarella cheese
Preheat oven to 400°F.
Remove the stems from the mushrooms and chop them finely (by hand or in a food processor); set aside.
(Mince the garlic, if using fresh cloves.)
In a mixing bowl, combine the beef, egg, garlic and vegetables (except the mushroom caps and stems), mixing with your hands until well blended.
Add all the spices; mix well by hand.
Add the chopped mushroom stems and Parmesan Cheese; mix well, again.
Place the stuffed mushroom caps onto a baking pan or sheet sprayed with cooking spray (PAM). Mound the stuffing mixture into the mushroom caps, both pressing it into the crevice under the rim of the cap and making a rounded top.
Place the pan i a 400 degree (preheated) oven for about 20 minutes.
Sprinkle the tops of each stuffed mushroom with equal portions of the Mozzarella Cheese and return to the oven for about 5 minutes or until the cheese topping has melted.
