Chicken Honey Nut Stir Fry*

-2 tsp. peanut oil-2 stalks celery chopped-2 carrots, peeled& diagonally sliced-1 1/2 pound boneless, skinless chicken breast, cut into strips-1 Tbsp. cornstarch-3/4 cup orange juice-3 Tbsp. light soy sauce-1 Tbsp. honey-1 tsp. minced ginger root-1/4 cup cashews-1/4 cup minced green onions
1. Heat 1 tsp. of oil in skillet over high heat.
2. Add carrots and celery; stir for 3 minutes.
3. Add remaining oil then add chicken; stir for 5 more minutes.
4. In small bowl, dissolve constarch into orange juice. Then mix in soy sauce, honey, and ginger root.
5. Add this sauce to skillet and cook over medium heat until thickened.
6. Remove from heat and top with cashews and green onion.
