Low Fat Strawberry & Blueberry Bran Muffins

Ingredients
3 c Wheat bran2 cup non fat milk1 c apple sauce or juice 100%2 egg1 1/3 c splenda brown sugar blend1 tsp vanilla extract2 c whole wheat flour2 tsp baking soda2 tsp baking powder1 tsp salt1 c blueberries fresh or unsweet. frozen1 c fresh strawberries chopped small
Directions
Preheat oven to 375 degrees F. Grease muffin tins. Mix Wheat bran & Milk together let stand 10 minutes. In large bowl mix applejuice, flour, baking soda, baking powder and salt. Stir into bran mixture until blended. Fold in strawberries and blueberries. Scoop into muffin tins.Bake in pre-heated oven for 15-20 minutes or until tops spring up when gently touched. Number of servings 24 Med sized muffins.

    I loved it! I baked it in a loaf pan instead of muffins and added walnuts and flax seeds to the mix. I would probably use less splenda brown sugar blend, I thought it was a bit sweet for my liking. I will definately be making this again and again! Yummy! - 7/7/09
