Eggplant Stir Fry

Ingredients
1 medium to large eggplant, unpeeled, sliced, cut into cubes1 med green bell pepper, chopped (should equal 1/2 to 1 cup)1/2 cucumber, unpeeled, thickly slices and cut in half1 1/2 Tbsp Lite Soy Sauce2 Tbsp extra virgin olive oil1 Tbsp crushed red pepper flakes.5 Tbsp black pepper1
Directions
1- Heat olive oil and soy sauce over low to med heat in skillet; allow to sit 1-3 minutes
2-Add egg plant and allow to saute for 5-8 minutes over same temperature
3-Add both cucumber and green pepper; increase or keep heat to medium; add black pepper and crushed pepper flakes, stir, and allow to simmer, covered for 10 minutes
4-Reduce heat to low; allow to simmer, covered, 10-15 minutes
