Olive Oil, .25 cup Onions, raw, 1.5 cup, chopped Garlic, 4 cloves Peppers, sweet, red, raw, chopped, 1 cup Bush's, Black Beans, drained and rinsed, 3 cup Vegetable Broth or water, 1.5 cup2 bay leaves*Cumin seed, ground, 1.5 tbs.Oregano, ground, 1.5 tsp Salt, 1.5 tsp Pepper, black, 1 tsp Pepper, red or cayenne, 1 tsp Parsley, dried, 3 tbsp Brown Sugar, 3 tsp packed *Lemon Juice, 1 fl oz Dash of Liquid Smoke
Makes four servings of about 1 c. each.
Saute onions, garlic, and bell peppers in olive oil until onions are tender. Add black beans, broth or water, cumin, oregano, bay leaves, salt, and pepper. Simmer to meld the flavors together--about 20 min. on low. Remove from heat and add lemon juice, parsley, and brown sugar. May add sour cream if desired, but is not included in nutrition information.
