Tasty Artichoke Chicken

Based on 4 chicken breasts apprx 5-6oz each.1/2 cup parmesan cheese, grated1-15oz jar marinated artichokes, drained and squeezed dry then chopped1/2 a 10oz box of frozen spinach, thawed and squeezed dry (whole box can be used if you prefer) and chopped1 tbsp minced garlic (approx 2-3 cloves)4oz light sour cream (approx 4 tbsp)3 tbsp light mayo1 tsp black pepper
Makes enough to evenly top 4 chicken breasts.
Preheat oven to 375 degrees.
In medium bowl mix together drained/squeezed artichoke hearts, parmesan cheese, light sour cream, light mayo, drained/squeezed spinach, minced garlic and pepper.
Place chicken breasts in greased baking dish and cover evenly with artichoke mixture.
Bake, uncovered, in preheated oven for 35 min or until chicken is done and juices run clear.
Note: Be sure to completely drain both the artichokes and spinach. Also squeeze all liquid from each before chopping and mixing together with other ingredients.

Thank you! I have made this recipe with and without the spinach and it tastes great both ways. The picture is without, but I had added chopped mushrooms instead. The recipe is easily modified and a great and tasty way to sneak in veggies for the kids!

This was AMAZING!!! I will definitely be making it again!! I added mushrooms and used the entire box of spinach, plus added a few more seasonings (a sun-dried tomato & basil blend). My husband and I LOVED this, and the leftovers were great too!! Will DEFINITELY make this again and again! =) - 3/14/11
