Ingredients
Directions
4oz Elbow Pasta1 cup Frozen Broccoli1 cup Almond Breeze Unsweetened Original (*or 1 cup skim milk*)1/4 tsp Garlic powder1/4 tsp salt1/4 tsp white pepper (black is fine too)2 Tbsp flour1 tsp Dijon Mustard2 Tbsp Shredded/Grated Parmesan Cheese1/2 cup Shredded Cheese (ex: cheddar or jack)*using skim milk will add 20 calories per serving to the recipe
Cook the pasta in boiling water for about 4 minutes then add the frozen broccoli to the water w/the pasta and cook an additional 4-5 minutes until the broccoli is tender and the pasta is cooked to your liking. Drain the water.
While that is going on, simmer 3/4 cup (6oz) of the almond breeze or skim milk in a sauce pan making sure not to boil. In a small bowl, whisk together the remaining 1/4 cup (2oz) of almond breeze/milk, garlic powder, salt, pepper and flour. Pour this flour mixture into the simmering milk and whisk constantly for 2-3 minutes until the sauce gets thick. Remove the sauce from the heat and whisk in the dijon mustard, parmesan cheese and shredded cheese.
When the sauce mixture is thoroughly combined, add the pasta and broccoli to it and mix well until everything is coated. Put it back on the stove and heat through while mixing for about a minute and serve.
