Ingredients
1 CUP PLAIN FAT FREE YOGURT1/2 CUP SPLENDA BROWN SUGAR BLEND2 TBSP SMART BALANCE ORIGINAL BUTTERY SPREAD2 EGG WHITES11/2 CUPS QUICK COOKING OATS1/2 CUP SUN MAID DRIED CRANBERRIES AND RAISINS1/4 TSP CINNAMON1/4 CUP CHOPPED PECANS
Directions
1. PREHEAT OVEN TO 350 DEGREES. LINE A COOKIE SHEET WITH PARCHMENT PAPER.
2. COMBINE YOGURT, BROWN SUGAR BLEND AND BUTTERY SPREAD IN A BOWL: MIX UNTIL LIGHT AND FLUFFY. BEAT EGG WHITES UNTIL SOFT PEAKS FORM. FOLD INTO YOGURT MIXTURE. STIR IN OATS, DRIED FRUIT, CINNAMON AND PECANS JUST UNTIL BLENDED.
3. DROP BY HEAPING TEASPOONS ONTO PREPARED COOKIE SHEET. PRESS TOGETHER AMD FLATTEN WITH A FORK FOR UNIFORM BAKING. BAKE 18-20 MINUTES. COOKIES HAVE A MOIST CAKE LIKE TEXTURE.

    I was looking for a healthy cookie recipe because my mom recently had a heart attack and bypass surgery. I found this recipe and was not sure how good it would be. It is amazing. I used vanilla yogurt and applesauce in place of the butter. I will also add flax seed next time. Yum! - 6/2/14
